Christmas Dinner Leftover Recipe Ideas

Boxing Day. The morning after the day before. If your fridge is anything like mine, it’s currently full of plates and bowls of cooked food from Christmas Day lunch. Below are a few ideas to turn yesterday’s surplus in to today’s (and tomorrow’s!) tasty meals.

Turkey Curry

Whether you cook it from scratch or using a sauce from a jar, I think there’ll be a few households tucking in to this absolute classic today.

Surf & Turf Tacos

I’ve called these Surf & Turf because we have beef and prawns leftover but, when it comes to tacos, anything goes! Fry off sliced onions and peppers with herbs and spices then add in your meat. Serve in tortillas with salad, sour cream and guacamole.

Turkey Bolognese

Add shredded turkey to a simple ragù and serve with your choice of pasta. A firm family favourite among us.

Broth

Possibly the easiest meal to make with your leftovers. Pre-soak some pearl barley. Throw your veggies, gammon and pearl barley in to stock and bring to the boil. Season and serve with warm crusty bread. The ultimate comfort food.

Turkey Chilli

Shredded turkey, kidney beans, tomatoes, onions, garlic and chilli powder – super easy, super tasty. Serve with rice or on top of nachos.

Pizza

This is a good one to get the kids involved with. Top pizzas bases (or tortillas) with tomato purée, cheese and whatever else you fancy. Bung it in the oven until the base is crispy and the cheese has melted then enjoy.

Sandwiches

If the thought of even turning the cooker on after yesterday fills you with dread, get a couple of slices of bread and make yourself the supreme snack – a sandwich!

10 Years Of Being A Parent – What A Ride

An open letter to my children, Evie and Harry.

As 2020 draws to a close, I thought now would be the perfect time to look back on the last decade of being your mam, a little trip down memory lane remembering the last ten years of our family life. Reflecting on the highs, the lows and all of the moments in between that make up our family story.

Family Timeline

Evie, you arrived in October 2010. Harry, you made your appearance 15 months later in January 2012. Despite some of the comments, you were both very much planned. Having you close together has been amazing (although, I have nothing to compare it to!) Yes, you occasionally fight and argue but, for the majority of the time, you’re best friends. I hope that never changes. You’ve both always been good eaters and good sleepers so your early years were pretty easy. You both enjoy learning, settling in to school no bother. Evie, your teachers have always commented on your mature attitude and class you as “an all rounder”, performing consistently well regardless of the subject. Harry, your love for maths has been noted from an early age – you can do sums for days! Outside of school, you both love online gaming, the two of you seem to have inherited my interest in cooking and neither of you complain when I drag you along on random days out (although if it’s too cold, Harry, you will ask to stay at home with dad). As you enter your tween / teenage years, I’m fascinated by your personalities, the little quirks that make you you and your ability to make me smile daily.

Major Events

Luckily, hospital visits have been few and far between. Not least, that time you, Harry, became concussed after dad threw you off the floor (that’s not what actually happened but it’s the version we recount 😂) and Evie, you fulfilled your childhood dream of breaking a bone after a day in Durham. When it comes to newsworthy events, the ones that stand out for me include when Storm Emma (nicknamed the Beast From The East) hit in February 2018. Two weeks of temperatures measuring -5°C and snowfall reaching 50cms. The UK has never been able to deal with snow so you can imagine the chaos that ensued. Schools were temporarily closed and if we thought those few days were tough, we had no idea what 2020 had in store! Which brings me on to the COVID-19 worldwide pandemic. Working from home and homeschooling became the norm, luckily your school, Bede, went above and beyond ensuring any gaps in teaching were kept to a minimum. Days out, trips, and holidays were all cancelled as we were told we must stay in doors. As I write this, we’re still very much in the midst of lockdown and who knows when we’ll get back to any sort of normality. For the most of it, you’ve both coped brilliantly with the changes and, although you miss seeing friends and family, I think we’ve all enjoyed living in our little bubble.

Fond Memories

My head is full of fond memories of you two growing up but, for the purpose of this blog post, I’ll tell the times of when you both made me proper belly laugh. Evie, you’d landed the role of Mary in the Reception nativity. You delivered the lines with a slight twist that made Mary come across as a feisty feminist. And Harry, you once took a black biro to your face in the middle of Asda and proudly proclaimed “look mam, I’m a tiger!” You wouldn’t let me wipe your stripes off and so we continued the shop while you roared at everyone that looked at you.

Not So Fond Memories

As I’ve said, you were both pretty easy children and I honestly don’t have any truly awful memories of either of you. Probably the worst time was when we had to deal with Chicken Pox. Evie, you had them first. The spots appeared two weeks before we were due to fly to Disneyland. You had a pretty mild case and didn’t seem to suffer at all. Luckily, on the morning we were due to leave, the doctor issued us with a Safe To Fly letter and off we went for a week with Minnie and Mickey. A week after returning home, Harry’s case of chicken pox hit and it hit hard. I’ve never seen a child as covered as you were – they were in your mouth, on your eyelids and in every crease of your little body. You were an absolute trooper though – you happily played in oat baths, giggled as I covered you in the “magic foam” and tried really hard not to itch. You have one little scar in your eyebrow from the whole horrific ordeal.

Personal Achievements

Aside from the academic achievements, I think you should both be super proud of the times when you’ve really pushed yourselves. Remember how you felt when we reached the top of Latrigg and you had that amazing view of Keswick at your feet? Conquer your fears and worries more often and embrace your self worth after doing it.

Things I Hope I’ve Taught You

Put yourself first! Regardless of the relationship, if it feels toxic to you there’s absolutely nothing wrong with cutting that out of your life. I know at this age you both roll your eyes when I tell you to listen to the words of different songs but, give it time and you’ll adore “Sunscreen” by Baz Luhramm as much as I do.

The Next 10 Years

I mean, nobody could’ve guessed how 2010-2020 would turn out so I’m not even going to predict what the next 10 years will hold. But I want you to know how incredibly honoured I am to be your mam, I feel privileged beyond belief walking beside you both as you continue on your journey of life. Hand-on-heart, you’re both proper canny kids.

I think we’ve all accepted Christmas 2020 is going to be a little bit different. Rather than dwell on what we’re missing out on, here’s a list of things we can still enjoy regardless of what rules are in place.

1. Get Your Bake On

2. Enjoy A Winter Walk

As temperatures start to drop, hunt out your hats, gloves & scarves and go for a seasonal stroll. National Trust have brilliant COVID secure measures in place with timed entries and one way systems (bookable entry slots are released every Friday for the following week).

3. Festive Film-athon

4. Schedule FaceTime/Skype/Zoom Video Chats

I wonder how many more hours of video calls have been made throughout 2020 compared to last year. When we can’t see people face-to-face, video calling is definitely the next best thing.

5. Get Crafty

From wreaths to wrapping paper, hampers to snow globes. There’s something deeply satisfying about creating items yourself. Pinterest is full of ideas for homemade Christmas crafts. So, grab the ribbons & fake flowers and get the glue gun turned on.

6. Go Virtual

Most companies have had to adjust the way they operate this year and a lot have moved experiences on line. Quizzes, escape rooms, murder mystery nights, pantomimes – when we can’t have the usual Christmas night out, these are a good way to “meet up” and have a laugh (and you can do them in a PJ’s!). Last week we tried an online experience from https://thepanicroomonline.net and thoroughly enjoyed it.

7. Drive In Movie Experience

Get cosy in the car and enjoy a festive film. There’s a few Drive In Cinema Experiences popping up throughout the North East, a quick google will bring up any still with availability.

8. Games Night

It wouldn’t be Christmas without a game of monopoly, am I right? And now Evie & Harry are a little older, I don’t feel guilty playing to win! We also enjoy Cluedo, Articulate and Dobble. What are your favourite board games?

9. Keep Your Traditions

Whether its Elf On The Shelf or Christmas Eve Boxes, writing to Santa or making gingerbread houses – if you have any traditions, do them and go totally OTT with them all! If you don’t have any Christmas Customs, maybe this is the year to start one.

10. Enjoy a more relaxed pace and a less hectic December

Yes, we’ll miss seeing friends and family but the thought of not having to rush about with that feeling of panic does have a certain appeal. I’ll be fully embracing a quieter Christmas with these three 😊.

Our Top 10 Christmas Movies

For me, as the kids become older, movie afternoons become more enjoyable. Their film choices improve massively and they can actually sit for 90 minutes without becoming bored. Talk about a parenting win!

Below are a list of our festive film favourites that we’ll be sitting down to enjoy this December.

Cinnamon Bun Recipe

These homemade sweet buns are pretty easy to make (although they do take time) and they are absolutely delicious!

INGREDIENTS

For The Dough

600g Strong White Bread Flour

14g Dried Yeast

80g Caster Sugar

90g Butter

275ml Warm Water

1 Egg

For The Filling

50g Butter (melted)

180g Light Brown Sugar

2 tbsps Cinnamon

For The Glaze

250g Icing Sugar

3-4 tbsp Water

METHOD

1. In a large bowl, mix together the flour, yeast and caster sugar.

2. Rub in the butter so it resembles breadcrumbs.

3. Add the water and beaten egg in to the dry ingredients.

4. Knead the mixture until it comes together and is no longer sticky – it’ll take about 10mins.

5. Transfer the dough in to a lightly oiled bowl and cover with a damp towel or with cling film.

6. Leave it to rise for 1-2 hours, until it has doubled in size.

7. Once the dough has risen, transfer to a lightly floured surface and roll out in to a large rectangle (roughly 30cm x 60cm).

8. Brush the dough with the melted butter.

9. Mix together the sugar and cinnamon then sprinkle over the buttered dough.

10. Roll the dough in to a sausage, long edge to long edge.

11. Cut the sausage in to 12 equal portions.

12. Place the portions in to a rectangular baking dish.

13. Cover the dish (again with either a damp towel or cling film) and allow to rise for about an hour.

14. Preheat your oven to Gas Mark 4 or equivalent.

15. Bake for 30-40 mins until golden brown.

16. Leave to cool.

17. Make the water icing to desired consistency then pour over the buns.

18. Tear apart and enjoy!

North Pole Breakfast Ideas

December is the ideal time of year to indulge in some special Christmas traditions and a North Pole Breakfast is a lovely way to welcome in the festive season.

You can combine this Christmas tradition with the dreaded Elf On The Shelf, many families start both of these on the same day as a way to welcome their mischievous festive friend back for another year.

Below are a few ideas for what to serve during your North Pole Breakfast – just remember, this is a special treat that only happens once a year so it isn’t going to be the healthiest but embrace and enjoy the blowout, it’s Christmas after all!

SANTA PANCAKES

Pancakes, fruit, nuts, chocolate and squirty cream – guaranteed winner in our house. I tend to serve pancakes up as a Grazing Board and let everyone help themselves – maximum effect with minimal effort.

Like a giant pain au chocolat – amazing!

DIPPY EGGS AND SPECIAL SHAPE SOLDIERS

One thing I’ve found out about dippy eggs is everyone has their own way of achieving them. I’m a 5-mins-in-to-boiling-water-and-hope-for-the-best kinda girl. Nine times out of ten it works but there is the occasional fail. For a North Pole Breakfast, I serve the dippy eggs with festive shapes cut out of toast.

CINNAMON BUNS

Now, these do take time but they’re so worth it! Fresh out the oven and drizzled with water icing, these sweet bread rolls flavoured with the ultimate Christmas spice are absolutely devine!

Walking With The Snowman and The Snowdog – North Tyneside 2020

Over the coming weeks, enjoy a (socially distant) Christmassy walk around North Tyneside’s town centres following The Snowman and The Snowdog trail.

This winter, North Tyneside’s most prominent shopping areas are delighted to welcome Wild In Arts festive sculpture trail celebrating Raymond Briggs’ quintessential Christmas characters, The Snowman and The Snowdog.

The ‘Walking with The Snowman and The Snowdog’ trail is made up of 20 stunning sculptures featuring twelve giant Snowman and eight Snowdog.

Each of The Snowman figures have been reimagined with stunning designs and decoration relating to the song, ‘The Twelve Days of Christmas’.

The sculptures are waiting to be discovered in and around North Tyneside, specifically Wallsend, North Shields, Killingworth, Tynemouth and Whitley Bay.

The trail is centred around North Tyneside’s shopping areas to hopefully encourage those completing the trial to support small businesses and shop local in the run up to Christmas.

An interactive app costing 99p, which includes a trail map and sculpture information, is available for download in the app store with the proceeds going to St Oswald’s Hospice.

After visiting each sculpture, you can share your ‘snowfies’ with the sculptures using: #SnowmanandSnowdogNT

Local artist Lisa Kirkbride designed the A Partridge in a Pear Tree Snowman, which can be found outside “For the Love of the North” at Spanish City in Whitley Bay. Prints and Christmas cards based on Lisa’s design can be purchased in-store, online and in selected St Oswald’s Hospice shops.

You can also bring home the magic of The Snowman and The Snowdog Trail North Tyneside 2020 with Snowdog figurines available in-store at “For the Love Of The North” or online at https://www.snowdogarttrails.co.uk/shop/.

The Snowman and The Snowdog trail is available from Saturday 14th November through to the end of January 2021 so plenty of time to get out there and find them all.

Chocolate Rice Crispie Christmas Puddings

Super quick and super tasty festive sweet treat.

INGREDIENTS
– 200g Milk Chocolate
– 50g Butter
– 180g Marshmallows
– 100g Rice Crispies
– 50g White Chocolate
– Small amount of red and green fondant

METHOD

1) Place a large bowl over a pan of simmering water. Add in the milk chocolate and butter and gently melt over a low heat.

2) Add in the marshmallows and stir until melted and combined.

3) Remove from the heat and pour in the rice crispies. Mix until the rice crispies are completely coated in the chocolate mallow.

4) Allow the mixture to cool slightly.

5) Using a tablespoon, divide the rice crispie mix in to equal portions and roll in to balls. Dampening your hands with a little water will prevent the mixture sticking to you.

6) Pop the balls in to the fridge for 30 mins to set.

7) Meanwhile, melt the white chocolate and make your holly leaves and berries. Alternatively, check out the supermarket baking aisles – they usually sell pre-made festive cake decorations.

8) When the puddings have chilled, remove from the fridge and decorate with a drizzle of white chocolate and a sprig of holly.

9) The puddings will keep in the fridge for about one week.

10) They’re best enjoyed at room temperature.
